White to light yellow crystal or crystalline powder, odorless, can give food a strong sour taste, highly soluble in water, insoluble in chloroform, ether, benzene and grease. It is stable at pH 3.4-4.5 in dry air, but is easily oxidized and destroyed in alkaline and neutral solutions and can turn brown when exposed to light.
Mainly used for dry foods such as ready-to-eat powdered foods, solid beverages and health foods, for fortification or nutritional supplementation of liquid foods such as juices and soft drinks, and for marinating meat.
