Description

White crystal or crystalline powder, sweet taste, about 70% of the sweetness of sucrose. Odorless or slightly characteristic odor. Relative density d4201.525 (water content). It has reducing properties and right-handed optical rotation. Divided into two isomers, α-form and β-form. Alpha-lactose can be broken down into glucose and galactose by acids and lactase enzymes.
