White crystalline powder, almost odorless, bitter taste, soluble in water. The pH of 10% aqueous solution is 6.5~-7.5. The performance of nicotinamide in dry state is stable below 50℃. The aqueous solution has strong light resistance. However, it can be hydrolyzed into niacin when heated with inorganic salts or alkali, and the crystals are slightly hygroscopic. Niacin and niacinamide are very stable to heat and oxygen, making them one of the most stable vitamins, but they can still be lost in large amounts when cooking with water.
Niacin is an FDA-approved, commercially available niacin fortifier that mainly used as a fortifier for cereals, flour, rice, health foods and powdered foods.
